Plant-based chocolate mousse
Ingredients
- 1 mashed avo (about half a cup)
- 6 pitted dates
- 300ml coconut milk
- 1 tsp vanilla essence
- 1/4 cup cacao or even cocoa powder
Method
- Soak dates in hot water for about 10 minutes
- Meanwhile mash the avo
- Once dates are soaked, drain them
- Now add everything to a blender
- Blend until smooth - takes about 1 minute
- Transfer to ramekins
- Chill for about an hour
- Serve with whatever toppings you prefer
