Plant-based chocolate mousse

Ingredients

  • 1 mashed avo (about half a cup)
  • 6 pitted dates
  • 300ml coconut milk
  • 1 tsp vanilla essence
  • 1/4 cup cacao or even cocoa powder

Method

  • Soak dates in hot water for about 10 minutes
  • Meanwhile mash the avo
  • Once dates are soaked, drain them
  • Now add everything to a blender
  • Blend until smooth - takes about 1 minute
  • Transfer to ramekins
  • Chill for about an hour
  • Serve with whatever toppings you prefer
